Ingredients:
- 2 boxes of pasta shells (can use a gluten or grain free option)
- 1 large boiled potato
- 2 cups skinned and cubed butternut squash (check the frozen or readymade section for less prep)
- ½ cup cashews boiled or soaked overnight
- ¾ cup nutritional yeast
- 1 cup vegetable broth
- 2 tsp salt
- 1 tsp pepper
- 2 cloves fresh garlic or 2 tsp garlic powder
- 2 tsp onion powder
- 2 Tbsp avocado or olive oil
Directions:
- Boil the potato and cashews in one pot of water for about 10 minutes or until soft; then drain
- Boil noodles according to box instructions
- Sauté garlic cloves if using and butternut squash with oil in a sauté pan until caramelized
- Add all ingredients for the cheeze to a high speed blender and blend until smooth
- Mix the cheese in to the cooked noodles and enjoy!
